Spicy Pork Chimichurri-Style Casserole Recipe


2 tablespoons olive
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon black pepper
1 pork tenderloin (about 1 lb), cut into 3/4-inch cubes
1 large onion, halved, cut into 1/2-inch-thick wedges
1 lb unpeeled small red potatoes, quartered (2 1/2 cups)
3/4 to 1 lb sweet potatoes (about 2 medium), peeled, cut into 1 1/2-inch pieces (3 cups)
1 cup chopped fresh parsley
2 tablespoons chopped fresh oregano leaves
2 tablespoons fresh lime juice
1/2 teaspoon crushed red pepper flakes
2 cloves garlic, finely chopped
1 3/4 cups Progresso® chicken broth (from 32-oz carton)
1 can (12 oz) Pillsbury® Grands!® Jr. Golden Layers® refrigerated biscuits (10 biscuits)
1/4 cup finely chopped fresh cilantro


1. Heat oven to 350°F. In 3- or 4-quart ovenproof Dutch oven, heat oil over medium-high heat. In large shallow bowl, mix flour, salt, paprika and black pepper. Stir in pork until evenly coated. Add to hot oil; cook and stir until evenly browned. Add remaining ingredients except biscuits and cilantro, including any unused flour mixture; mix well.

2. If handles of Dutch oven are not ovenproof, wrap them in foil. Cover Dutch oven; bake 40 minutes. Remove Dutch oven from oven; increase oven temperature to 375°F.

3. Separate dough into 10 biscuits; arrange on top of hot pork mixture. Bake uncovered 14 to 18 minutes longer or until biscuits are golden brown. Sprinkle with cilantro before serving.

One pound of boneless pork shoulder can be substituted for the pork tenderloin.

Chimichurri originated in Argentina as a sauce or marinade for grilled meats. It is typically served as an accompaniment, but we’ve used the ingredients to flavor this casserole.

went to help brew our first batch of wedding beer, a rogue-esque mocha porter. kate treated me to dinner after the steamy hops fun. she had leftover pork tenderloin that we ate cold along with fresh tomato and her homemade mozzarella, basil, avacado, lime and rice jazzed up with spinach and mushrooms.

lemme talk pork as this was the show stopper. as i told kate, this falls in my top 2 grilled pork tenderloin hall of fame. she marinated it over night in cider vinegar then rubbed it with some homemade chili powder before throwing it on the gas grill and cooking it to perfection. see how pink it still is? good job.

the other tenderloin moment of greatness--jeannie. this was eons ago and i remember she had done a similar method of preparing the pork but used a charcoal grill instead and it was so charred and wonderful on the outside but the inside was like butter and had such a good spicy flavor.

  • Fish is naturally tender, requiring short cooking times at high temperatures. Allow 10 minutes per inch of thickness (at the thickest part) for fresh fish, 20 minutes per inch for frozen fish.

Pau skin :
400g Hong Kong flour (Water-Lily flour)
200g water
70g sugar
A pinch of salt
10g double action baking powder
7g instant dry yeast
30g shortening

Filling :
300g deboned chicken thigh meat, diced
5 black mushrooms, diced (I used 3 only)
1 stalk parsley, chopped
5 water-chestnuts, diced (I used 2 only)

Seasoning :
1 tbsp ginger juice
1 tbsp soya sauce
1 tsp rose wine (optional)
1 tbsp sugar
1 tbsp oyster sauce
1 tbsp sesame oil
2 tsp cornflour
a dash of pepper
1 tsp chicken stock granules

Thickening (combine) :
1 tsp cornflour
1 - 2 tbsp water (I used 2 tbsp)

Method :
(1) Put all the dough ingredients into a mixing bowl and knead into a dough. You can add water or flour accordingly depending on whether the dough is too dry or too wet. Mix until you get a smooth dough
(2) Proof the dough for 30 minutes. After 1st proofing, divide dough into smaller individual portion (I used 60g and the pau is huge). Round up the dough and rest for another 5 minutes
(3) Roll out dough and add in fillings. Wrap dough up. If you want a round round pau without the plead, just place the sealed side down on the paper. Leave it to proof the last time for another 15 minutes
4) Steam over medium high fire for 15 minutes.

To make filling: Marinate chicken and black mushrooms with seasoning for half an hour

Heat wok with 2 tbsp oil and stir-fry the seasoned ingredients until cooked. Mix in thickening, add in 1 tbsp toasted sesame seeds and mix well. Leave aside to cool. Refrigerate before use

Preparation time: 20 minutes
Total cooking time: 25 minutes
Serves 4

1 tablespoon oil
1kg (2 lb) chicken breast fillets, cut into thin strips
30g (1 oz) butter
1 onion, chopped
1 clove garlic, crushed
3 teaspoons Hungarian paprika
425g (13 1/2 oz) can chopped tomatoes
1 tablespoon tomato paste
3 tablespoons chicken stock
3/4 cup (185 g/6 oz) sour cream

1. Heat the oil in a frying pan over moderate heat and fry the chicken strips, in several batches, until they are well browned.
2. Melt the butter in a microwave-safe bowl on High (100%) for 30 seconds, add the onion and garlic and cook for 3 minutes. Add the paprika, tomatoes, tomato paste and chicken stock and mix well. Cook on High (100%) for 3 minutes.
3. Stir in the browned chicken strips. Cover and then cook on HIgh (100%) for 10 minutes; stir after 5 minutes.
4. Mix in the sour cream and season to taste. Cook on Medium (50%) for 3 minutes, stirring every minute. Leave for 10 minutes, then serve with rice, noodles or crusty bread.

Note: Leaving for 10 minutes before serving lets the flavours develop and the meat tenderise. If possible, make the day before and reheat thoroughly on Medium (50%).
Variation: Use chicken thigh fillets instead of chicken breast fillets.

Here's the ultimate turkey roaster on the one burner stove. Camp Chef sells both products. We put about 1/4 cup of oil in the bottom of the roaster, impaled the bird on the iron prong, put on the lid and turned on the heat. The bird cooked about 2 hours, which is a little longer because we took the lid off several times to show folks the product, and the bird. Below the roaster is a one burner stove, also Camp Chef

This was the first of two turkeys. We cooked it the night before Thanksgiving. The heritage birds don't get so big so we ended up with two 13 pounders for 16 people. We were going to cook one in the roaster and one in the oven, but the turkeys were too upright to fit in the roaster. So we just made one the night before. It worked out well.
